peanutty ice cream sandwiches    


Ingredients:

1  (20-oz.) pkg. refrigerated peanut butter cookie dough
2 2/3  cups Häagen-Dazs® Vanilla or Chocolate Ice Cream, slightly softened*
8  maraschino cherries or miniature marshmallows
3/4  cup chopped peanuts




Preparation:
1. Heat oven to 350°F. Spoon and shape heaping teaspoons of cookie dough into 16 balls. Place balls about 2 inches apart on ungreased cookie sheets. With fork dipped in sugar flatten in crisscross pattern.
 
2. Bake at 350°F for 9 to 14 minutes or golden brown. Cool 1 minute; remove from cookie sheets.
 
3. To assemble each sandwich, place 1 scoop (1/3 cup) ice cream on bottom side of 1 cookie. Place a cherry in center of ice cream. Top with second cookie, bottom side down; gently press together. Roll ice cream edge of sandwich in chopped peanuts. Quickly wrap each sandwich in foil. Freeze 2 to 3 hours or until firm.

TIP:
* To soften ice cream, place container in the refrigerator for 15 to 20 minutes OR until easy to scoop.
