Preparation

ginger fruit salsa

combine 1 cup each diced fresh strawberries and pineapple. stir in 2 tablespoons minced crystallized ginger. let stand at room temperature for 1 hour, for flavors to blend (or refrigerate up to 12 hours). spoon over servings of dark chocolate ice cream.

jalapeno fruit salsa

combine 1 cup each diced fresh strawberries and mango. stir in 1 to 2 tablespoons finely minced fresh jalapeno pepper (depending on heat of jalapeno) and 1 teaspoon granulated sugar. let stand at room temperature for 1 hour, for flavors to blend (or refrigerate up to 12 hours). spoon over servings of chocolate ice cream.
